James Wilson
Head Chef at Moda, House of George
Our phenomenal head chef joins us from 3 Michelin Keys Hotel, The Newt in Somerset.
From his first job at Wentworth Golf and Country Club at 18, his intrigue into the ethos and approach of Nordic cuisine led him to Scandinavia. Here he honed his technique and vision working under multiple Michelin Starred chefs across Finland, Sweden and Denmark, including Toni Kostian of Grön in Helsinki and Magnus Ek of Oaxen Krog in Stockholm who have influenced and inspired the chef he is today.
Coming back to the UK in 2018 to the north coast of Scotland, in his first Head Chef position, he opened the boutique hotel Lundies House developing further his delight of foraging and use of local seasonal produce to harness purity, simplicity and freshness in his dishes.
Covid then led him down to Somerset to The Clockspire, before moving to The Newt and subsequently to Broadway and Moda at House of George.
His food here at Moda will continue his culinary journey and showcase his exceptional talent.

Anthony Au Yeung
Operations Manager, House of George
Our exceptional Operations Manager brings over two decades of hospitality experience across a wide range of dining experiences.
Born and raised in Hong Kong, Anthony began his hospitality career with a summer job at McDonald’s where he found his love for people engagement. He soon moved into fine dining with his first role at the 5* Island Shangri-La Hotel honing his skills at the prestigious Chinese restaurant Summer Palace. He expanded his expertise at Mandarin Oriental and Grand Hyatt Hong Kong before spending 15 years at the globally renowned L’Atelier de Joel Robuchon, 3* Michelin French restaurant. The restaurant held this accolade for twelve consecutive years, with him at the helm as Operations Manager.
His love of fine food and wine has taken him around the world exploring different cultures and cuisines.
He brings to us his knowledge and passion for exquisite service, guest experience and fine dining.
